Beat eggs in a bowl and put aside. Spray skillet with cooking spray, saute peppers and onions in skillet, while they are heating up, place bacon on a paper towel in a microwave and cook for 2 minutes (depending on power of micro). When peppers and onions are heated, add them to the bowl of eggs and mix together. Add more spray if desired and heat the eggs. When the bottom is set up, flip the omlet and add the cheese and cooked bacon to the center and fold the omlet. This goes great with fresh fruit and coffee of tea.
