Wash eggplant, slice into thin slices, put on lined cookie sheet and bake at 400 for about 15-20 minutes until golden. Meanwhile scramble eggs in a separate dish, allow sauce to cool (if you just cooked it) then pour the eggs into the sauce. This will look kind of gross but it is worth it.... Put approx 2 tbsp spaghetti sauce on bottom of a 9x11 pan, then a layer of eggplant, topped with a layer of sauce and sprinkle of cheese, keep layering until you are out of eggplant. Top with sauce, remaining cheese and a sprinkle of parmesan. Bake 325 for 40 minutes until hot and bubbly, or cover tightly with plastic wrap and freeze for up to 2 months!
