4 slices of proscuitto, chopped
1 c. frozen peas
2 T. flour
1 c. milk
1/2 c. parmessan
1/2 t. black pepper

Here is how you make Tortellini with Proscuitto and Peas:

This makes 4 servings, about a cup each, give or take. This is quite a salty dish so if you are watching your sodium, stay away from this one.Boil tortellini according to package directions. Add peas during the last couple minutes of cooking time.Cut the proscuitto up into about 1/4 pieces. Roll the slices up. Make slices one way and then turn the roll and slice the other way. Spray a non-stick pan with a bit of non-stick spray and saute proscuitto until it is a bit crispy. Remove from pan and set onto a paper towel. Dissolve the flour into the milk in a small bowl and then put it in the same pan you cooked the proscuitto in, and scrape the bottom of the pan to get up those yummy bits on the bottom of the pan. Cook stirring constantly for 8-10 minutes until it has thickened. Turn off the heat and add the parmessan and pepper. Stir through and then add the proscuitto, peas and tortellini.
