1 medium Carrot - peeled and chunked (microwave 1 - 2 minutes)
1 - 2 T. Olive Oil
1/2 Onion - peeled and diced
3 oz Fresh Mushrooms - sliced & chopped
1 1/2 t. Powdered or Granulated Garlic
1/2 t. Creole Seasoning
1 T Flour
1 1/3 cans (apx 2 cups) Creamed Corn
2 c. Frozen Peas - rinse in warm water to de-ice
4 c. Mashed Root Vegetables
2 T. Paprika
1/2 c. Mild Chedder Jack - shredded


How Do I Make Penny's Shepherd's Pie?

Here is how you make Penny's Shepherd's Pie:

Preheat oven to 400 - 425 degreesAdd oil to large flat pan. Add onion and mushrooms and fry 1 - 2 minutes until mushrooms are limp. Crumble lamb into pan and cook until lamb is almost done. Add carrots and continue cooking until lamb is browned. Add spices. Taste -- may need salt & pepper. If mixture is too wet, add flour.Place lamb mixture into a 13 x 9 pan (ladle out of cooking pan so that you do not transfer additional fat). Spread mixture evenly over bottom of pan. Top with Cramed Corn. Add layer of peas. Top with mashed root vegetables evenly, to seal "pie". Top with a little paprika. Cook until bubbly (apx 20 minutes) Add cheese evenly; return to oven for 10 minutes or until cheese melts. Let cool 10 minutes before serving.Can be assembled ahead; keep refrigerated.
