1 TB Apple Cider vinegar
1 tablespoons low-sodium soy sauce
1 teaspoon grated peeled fresh ginger
1 teaspoon sesame oil
1/2 teaspoon five-spice powder (optional)
1 garlic clove, crushed
Cooking spray
1/4 cup water
1/2 C. Cherries
GARNISH: Sage sprigs orange slices or additional cherries (optional)

1.Preheat oven to 425º. Combine Jam or Duck sauce and next 6 ingredients in a bowl. Reserve 2 TBS. mixture; set aside.2.Place the roast on a broiler pan coated with cooking spray. Insert a meat thermometer into thickest portion of roast. Brush remaining mixture over roast. Bake at 425º for 40 -50 minutes or until meat thermometer registers 160º (slightly pink). Baste occasionally with drippings. Let stand 5 minutes before slicing. Serving Size: 4 ounces pork and 2 tablespoons sauce3.Strain pan drippings through a sieve into a bowl, reserving 2 tablespoons. Discard remaining liquid and solids. Combine pan drippings, and ½ the water in a small saucepan. Thicken with cornstarch mixed with remaining. water Add cherries. Bring to a boil; reduce heat, and simmer 2 minutes. Serve sauce with roast, and garnish with additional cherries, oranges or sage sprigs, if desired.
