In heavy pot, heat olive oil. Brown meat on all sides. Add garlic and cook 1 minute more. Add enough water to cover meat. Cook meat 2 hours. Add all vegetables except brussel sprouts. Add seasonings to your taste. Cook another 1 to 1 1/2 hjours. Add brussel sprouts 15 minutes before serving. Leave cover off of pot for last 15 minutes if there is too much water, Water should be at least 2/3 way of meat and vegetables.
