Here is how you make Red and Yellow Roast and Taters:

Heat olive oil in a pan and sear roast on all sides. sprinkle pepper on bottom of crock pot or large pot (if you're a stove top cooker). Place roast in crock pot and add everything except the potatoes. Cook on low (crockpot) or at a low simmer (stove top) for about 3 hours. Add the potatoes about 30 minutes before serving. They will absorb the remaining seasonings from the broth.
