2 cups cooked, diced Ham
2 medium Potatoes
10 cups Water
1/2 to 1 cup dehydrated Potatoes (if needed)
1 meaty Ham bone
salt
pepper
spices to taste

Here is how you make Bean and Ham Soup:

Soak beans overnight. The next day, put the ham bone in the 10 cups of water, bring to a boil, cover and simmer for 2-3 hours to make broth.After the ham bone has been cooking for at least 2 hours, drain, rinse, and clean the beans, cover with water, bring to a boil, cover and reduce heat to simmer for 1 hour.Meanwhile, you can chop onion, celery, and carrots into small pieces.When the beans are done, drain and rinse again. Put the beans, ham, celery, carrots, and onions in a large pot with the beans. At this time add your spices. I usually use garlic, basil, bay leaf, parsley, salt and pepper.Remove the ham bone from the water. Clean the ham stock, removing anything you don't want to eat (straining if necessary). Pour enough stock over the other ingredients to cover plus an inch or two. Bring to a boil. Cover and reduce heat to simmer for another hour or 2 (til veggies are very tender). This can be simmered for as long as you like.About 45 minutes before serving, peel potatoes and chop into bite size pieces. Put potatoes into soup. Recover and continue simmering for another 30 to 40 minutes. About 5 minutes before serving, add potato flakes (if needed) slowly until desired texture is achieved. Remember, soup will continue to thicken as it cools, so stop adding the flakes before soup is too thick.
