2 cans low sodium black beans (or northern beans), Rinsed
1/2 tablespoon olive oil
1 onion, diced
1 stalk celery, diced
2 carrots, diced
2 cloves garlic, minced
2 potatoes, peeled, cubed
2 TBSP tomato paste
1 chipotle pepper in adobo sauce, minced finely (I actually pureed mine in the food processor with a little of the adobo sauce)
6 cups chicken stock
12 oz leftover roasted pork loin, cooked


How Do I Make Chipotle Bean Soup?

Here is how you make Chipotle Bean Soup:

Preheat large stockpot with olive oil. Add onions, celery and carrots. Saute until onion is softened, 6-7 minutes. Add garlic and saute for another minute or two. Stir in the tomato paste and chipotle puree and mix well. Add the chicken broth and potatoes. Bring to a boil, reduce heat, and simmer for 15 minutes.
