1 medium Onion, raw, chopped
1 cup Carrots, raw, chopped
1 cup Celery, raw, diced
4 cloves garlic, minced
5-6 cups Pacific Natural Foods Organic Low Sodium Chicken Broth,
1 lb Spicy Pork Sausage, sliced
1/2 tsp Italian seasoning
1 tsp Salt
1/2 tsp Pepper, black
Tobasco Sause, to taste, if desired


How Do I Make Black-eyed Pea Crockpot Soup?

Here is how you make Black-eyed Pea Crockpot Soup:

Soak peas overnight in large pot. Discard any bad peas and put into crockpot. Dice veggies and place into crock. Add all seasoning except Tobasco. Cook on high for 6 hours (or nine on low). If you like a thicker soup, use an immersion blender or remove a couple cups and blend in a food processor or blender and return to the soup. Stir well and top with tobasco sauce, if desired. I used Chipotle Cheddar sausage in mine, yum!!!Makes approximately 8 servings at 1.25 cups each.Number of Servings: 8Recipe submitted by SparkPeople user WITHSPIRIT.
