(If vegetarian, omit this step and add sherry when mixing the cornstarch with water.) Soak wood ears and golden needles in a bowl, in boiling water, covered, for 15 minutes. Snap off wood pieces from ears and hard stems from needles. Cut needles in half and break up ears. Wash; drain and squeeze out water. Put 2 TBs. and 2 tsp. cornstarch (if vegetarian, use 3 TBs. cornstarch, and 1 tsp. dry sherry) in 1/2 c. cold water. Put chicken broth and water, salt, soy sauce, wood ears, and golden needles in a pot. Bring to a boil and stir in pork. Boil 1 minute. Add bean curd. Bring to a boil and stir in cornstarch mixture until soup thickens. Stir in beaten egg in a thin stream. Remove from heat immediately. Add pepper and vinegar. Place in serving bowl. Garnish with sesame oil and scallions.
