2 Tablespoons of olive oil
1 Med.-Lg Green Bell Pepper-sliced in strips
1 Med-Lg Yellow Bell Pepper-sliced in strips
1 Med-Lg Orange or Red Bell Pepper-sliced in strips
1 Large Spanish Onion sliced
1 Sm-Med Zucchini sliced
1 Med. Scalloped (Patty Pan) Squash sliced or cubed
1 Med -Lg Spaghetti Squash
*Thyme -about 1/4 tsp.
*Marjoram -about 1/4 tsp.
*Rosemary -about 1/4 tsp.
Parsley- fresh 3-4 leaves, or dried -1/4 tsp.
Black Pepper (to taste)
Salt- preferably Kosher- 1/8 tsp (or just use a dash)
2-3 links of Italian Sweet Sausage (approx. 4" x 7/8" per link)
1 Tomato -diced (optional)
Parmesian Cheese, fresh shredded-approx. 1 Tbls. per serving

*You may substitute these spices with 1 Tbsp. Italian Seasoning instead


How Do I Make Sandi's Italian Spaghetti Squash?

Here is how you make Sandi's Italian Spaghetti Squash:

Makes approx. 4 2-1/2 cup servingsPrepare spaghetti squash -cut in half lengthwise, clean out pulp, brush insides with half of the olive oil. Place face down on a cookie sheet or baking dish and bake at 375 deg. until pulp is soft, approx 45-60 minutes.About halfway through the spaghetti squash baking time, start preparing the other ingredients as follows: Remove sausage from link casing adn set aside. In a large skillet, heat bell peppers and onion with the remaining olive oil for about 3 minutes. Add zucchini and scalloped squash, and spices. Heat about 6 minutes on medium and then remove veggies from skillet and set aside. Brown the sausage in the skilillet breaking it up as it cooks. When sausage is lightly browned, stir in the cooked veggies and the tomato (if using); mix with sausage. Heat until the peppers and squash are tender. Cover, remove from heat and set aside.When spaghetti squash is ready remove from oven and carefully remove the pulp from the skins by scraping a fork across it. The pulp should come out like spaghetti. Divide the "spaghetti" into 4 portions on plates. Top with sausage and veggie mixture. Sprinkle with cheese.
