I had some elk meat and sweet potatoes and I wanted to make a stew with it. It occurred to me that with the addition of tomatoes, chick peas, peanut butter and spices I could make a Moroccan style stew. I limited the veggies to what I had on hand (onions), but you could also add others, like celery, peppers, or carrots. Also, we like it spicy, so reduce the amount if spices are not your thing.

1 pound of stew meat (I used elk)
1 large onion, chopped
1 clove garlic, minced
3.5 cups vegetable or meat broth (I used beef stock)
3 medium sweet potatoes, peeled and cubed
1 28 oz. can whole tomatoes
1 19 oz. can chick peas, drained and rinsed
1 oz. fresh ginger root, peeled and finely chopped
1 tbsp each cumin, curry powder, chili powder
2 tbsp peanut butter


How Do I Make Moroccan-Style Stew with Elk Meat?

Here is how you make Moroccan-Style Stew with Elk Meat:

Saute the meat, onions, garlic, and ginger in a non-stick dutch oven or large frying pan until meat is brown and cooked through. Add broth, and tomatoes in their liquid. (Chop the whole tomatoes with a spatula while combining with the other ingredients.) Add sweet potato and chick peas. Simmer approximately 20 minutes or until the sweet potato is cooked through. Stir in peanut butter and heat for five more minutes before serving.
