Heat oven to 400 degrees.Brown meat in large nonstick skillet on medium heat. Add salsa; cook 5 minutes or until heated through, stirring frequently. Remove from heat. Stir in rice and 1/2 c cheese.Spoon into peppers; place in two 13x9 inch baking dishes. Pour 1/2 cup water in each dish; cover with foil. (You can also use one large roasting pan instead of 2 9x13 pans)Bake 30 minutes; sprinkle with remaining cheese. Bake 10 minutes or until meat mixture is heated through and cheese is melted.makes 16 servings
