Zatarains's dirty rice mix 1/2 box
ground meat lean 93% 8oz
stewed tomatoes 1/2 can
corn small can or half large (drained)
black beans 1/2 can (rinsed and drained)
brown rice 1/2 cup (instant)
1/3 cup water(additional to mix directions)
4 bell peppers(halved)


How Do I Make Stuffed Bell Peppers with veggies?

Here is how you make Stuffed Bell Peppers with veggies:

In large skillet brown ground meat. I didnt use oil like the rice mix suggests. When meat is almost fully brown add stewed tomatoes, corn, and black beans. Heat for a few minutes Add box rice mixture with water according to directions. Also add additional 1/2 cup water for addtional rice. Bring to boil then add additonal rice. I add the additonal rice because I find the mix a bit salty.Reduce heat to low and cook for approx. 20 mins.Once rice mixture is done stuff in bell pepper halves. Cook in 425 degree preheated oven for approx 30 mins. I placed the bell pepper halves in casserole dish with a small amout of water in bottom of dish for steam.
