2 medium/large organic green peppers
1 cup chopped organic onion
1 can organic chopped tomatoes
1 cup cooked quinoa
*Salt and Pepper to taste
* Spices to taste (i.e. oregano, italian seasoning, garlic salt, cumin, cajun, tobasco...whatever you like)

Here is how you make Organic Quinoa Stuffed Peppers:

Preheat oven to 425 degrees. Core 2 medium-large green peppers. Prepare quinoa according to box directions. Cook and drain ground beef. Sautee onions with a bit of olive oil. Add the can of organic diced tomatoes and simmer 5 mins. Add in drained ground beef and cooked quinoa. Mix well.Stuff mixture into cored green peppers. Place in baking pan and cover with tin foil.
