3 pounds (1.5kg) beef short ribs

10-12 garlic cloves, smashed and peeled
1 cup (250ml) red wine

2 bay leaves
2 teaspoons coarsely ground black pepper

Here is how you make Red Wine and Short Ribs Adobo:

Heat the oil in a large pot or Dutch oven over moderately high heat. Season theshort ribs on all sides with the salt and the freshly ground black pepper, then addthe short ribs to the pot in batches. Cook the short ribs until brown on all sides, 3-5minutes per side. Transfer the short ribs to a large platter and set aside.Pour off all but 1 tablespoon of fat from the pot, then return the pot to mediumheat. Add the onions and garlic and saut? until the onions just begin to soften, about5 minutes. Pour in the red wine, stirring to scrape up any browned bits from thebottom of the pot. Simmer the red wine for 5 minutes.Add the red wine vinegar, soy sauce, bay leaves, and the coarsely ground blackpepper to the pot. Return the short ribs, along with any accumulated juices fromits platter, to the pot. Add enough water to the pot to just cover the short ribs, thenbring to a boil over high heat. Decrease the heat to low, cover and simmer for 2-3hours, making sure to turn the short ribs every so often. The ribs are done whenthey are fork tender and falling off the bone.Transfer the short ribs to a large platter and set aside. Increase the heat to high andbring the liquid in the pot to a boil.
