Apple Ladders

This is a delicious homemade pastry for holiday breakfasts or an afternoon tea. Don't like apples? Try mangoes, peaches, cherry pie filling. Works well with a variety of fruits. It's an adapted recipe from an old holiday cookbook called Treasury of Christmas Recipes by Crown Publishers. I added wheat germ for a more healthy family treat.

How Do I Make Apple Ladders?

Here is how you make Apple Ladders:

Mix softened butter, sour cream, flour and wheat germ with an electric mixer on high speed in a large mixing bowl. Reserve on tablespoon of the flour for later. Mix well and cover. Chill in refrigerator while working with apples. Slice apples thinly and put in a medium sized microwave safe glass dish. Sprinkle cinnamon, sugar, the reserved tablespoon of flour, and 2 tablespoons of water. Stir gently, cover with a lid, and cook on high in microwave for 3 minutes.Spray a cookie sheet with baking spray and preheat oven to 350 F. Divide dough in two halves. Roll out fairly thin in a more or less rectangle shape (you can trim it with a knife for a perfect rectangle or leave it for a more natural look). Fold in half and place on one side of cookie sheet unfolding flat once on sheet. Place 1/2 of apples down the very center of dough. "Make cuts about 2 inches deep at 1 inch intervals along both sides. Fold strips over filling pinching into narrow points at center." Repeat this process with other half of dough. Bake for 30 minutes at 350 F or until the dough starts browning slightly. The part in quotes come from the original recipe on which I based my version. The original called for walnuts on top of cherry pie filling. Cherry pie filling is not sold in Brazil so I have experimented with other fruits including cupaucu - a tropical fruit from the Belem area. Any kind of available nuts could be added for extra flavor. My boys aren't fond of most nuts. Also I added wheat germ for an extra health kick! I like to add wheat germ to my pancakes, biscuits and cakes. The original recipe also called for a powdered sugar icing before serving. I omitted this as I am trying to cut back on my family's white sugar intake. My boys eat this up and don't know any difference.Prep. time: 30 minutes with 30 more to bake for a total of 1 hour.Servings: 10 - 12Number of Servings: 10Recipe submitted by SparkPeople user AM.GIRLINBRAZIL.
