3 eggs separated into 2 yolks & 3 whites
1 1/4 cups vanilla flavored Soymilk
1 tablespoon canola oil
1-2 apples (depending on size) to equal 1 1/2 cups shredded apple with skin + liquid (shred just prior to adding to batter)

Here is how you make Apple Flax Waffles:

1. In large bowl, combine flour, ground flaxseed, baking powder, cinnamon, and nutmeg.2. Separate eggs in two medium-sized bowls.3. In medium bowl, beat (3) egg whites until stiff peaks form.4. In a separate bowl, lightly beat together (2) egg yolks, milk, and oil.5. Add egg yolk mixture to the dry mixture and stir until just combined.6. Shred apple and add to batter (be sure to include liquid)7. Fold in egg whites.8. Preheat waffle iron or griddle. May need to spray with nonstick cooking spray.9. For waffles: pour one large ladle-full of batter onto hot waffle iron. May need to bake through two cycles depending on the waffle iron.9. For pancakes: Pour 1/3 cup batter for each pancake and cook until bubbles appear, about one minute.
