combine fresh yeast with water (room temp), whisk until dissoved. Add in molasses and then mix into remaining ingredients. Knead approximately 150 times or until dough springs back quickly. Bench rest for 60 min. Form 2.5oz sections and rest for 20 minShape sections into bagels by either poking a whole in the center and just working the dough around evenly stretching it or you can roll it out like a snake and pinch the ends together and then work the stretching process. Once formed place in proofer or allow to rise until double in size - about 60 min. For bagels you will place in steam water for 60 sec - 30 sec each side before baking.For bialys you will not make a hole that goes all the way through instead you will leave a thin membrane that you can fill with what you wish - I did cinnamon/cream cheese and then sprinkled the tops with a bit of sugar.
