Here is how you make Fresh bagels:

Makes 12Add yeast and sugar to hot water and let stand until foamy, about 5 minutes.Mix flour and salt and gradually add to water, stirring until a stiff dough forms. Turn out onto a floured pastry sheet or floured surface and knead for 10 minutes. If using a stand mixer, knead for about 8 minutes using a dough hook on low speed.Place dough in a greased bowl and let rise in a warm place for about an hour.Remove dough from bowl and punch down, then divide into 12 pieces. Shape pieces into 12 balls, handling dough as little as possible. Let balls rise for 30 minutes. After rising, pinch hole in the middle of the balls, stretching and rotating until the donut shape is even on all sides. (Do not roll into logs then pinch the ends together, as the bagels tend to swell and uncurl during cooking, losing the bagel shape.) Place on greased baking sheet, cover with towel and let rise for another 30 minutes.While bagels are rising preheat oven to 400 and heat about 12 cups of water in a large pot to boiling. When bagels are rested drop a few into the boiling water, being careful not to crowd them, and boil for 2 minutes, then flip and boil for 1 more minute. Remove from water and drain for a few minutes. If necessary, gently blot with a paper towel to dry.If desired, brush bagels with an egg wash, then place on parchment lined or greased baking sheet.
