Here is how you make Sunshine Baked Eggs:

In skillet, cook bacon until crisp; drain and discard all but 2 Tbls drippings. Crumble bacon. In large bowl, lightly beat eggs; add bacon and drippings, cottage cheese, pineapple and vanilla. Pour into greased 8.5X11 baking dish. Bake, uncovered at 350 Degrees for 40-45 minutes or until a knife inserted near center comes out clean. Let stand for 5 minutes before serving.
