I modified a recipe I found on Spark Recipes to use oat bran flour because I didn't have any flour on hand. These tasted wonderful. To make my own oat bran flour without purchasing it at the store, I just cleaned out my coffee grinder with a dry paper towel and ground 1/4 of a cup at a time. The only problem I had was the pancake suck to the pan, I used a round 9 inch cake pan. I will probably use a ceramic pie dish or square casserole dish next time. To release the pancake from the pan, I cut it in half and used a spatula to scrape the bottom from the middle. It was a bit messed up, but still intact.
