This is a recipe from Jan Karon's recipe book, but I've halved the amount of shortening it calls for and I make the biscuits a little thinner than she recommends simply so I can have two without feeling guilty! :) I also spray the biscuits w/butter spray at the end instead of melted butter. Lightly grease a baking sheet with shortening and set aside. Sift the flour, baking powder, and salt into a large bowl. Cut in the shortening with a pastry blender until it resembles coarse meal. Stir in the buttermilk and form into a ball. Gently knead on a lightly floured surface until a dough is formed. Pat or roll out the dugh on a lightly floured surface into a 1/2 in thick round. cut out biscuits wth a 2 1/2 or 3 inch round cookie cutter and arrange on the baking sheet.
