Add butter, applesauce and sugar. Beat till smooth. Zest 2 oranges, juice, pulp and zest (at least 2 tablespoons of zest). Add boiling water and vanilla into orange mixture and pour into batter. Mix all dry ingredients together and add into batter mixture. Lastly, fold in chopped almonds and pitted dates. Pour into 2 loaf pans coated with non-stick cooking spray and bake 1 hour at 350 degrees. Makes 20 5/8 inch servings. This is a quick breakfast in the morning when I don't feel like cooking and full of fiber and protein too.
