6 eggs

Pre-heat oven to 375.Grease or spray three loaf pans.In a medium bowl, combine applesauce, yogurt, milk, lomone juice and eggs. Stir or beat until thouroughly combined.In a seperate bowl, combine flour, baking powder, salt, sugar, and lemon zest. Stir or whisk together, then make a well in the center.Add dry ingredients to wet, stirring just until moistened (don't use a mixer!) Add blueberries and combine - if using frozen blueberries, be extra careful not to stir too much, or you'll end up with purple batter. Just sprinkle a layer of blueberries onthe batter, fold it in (once!) and repeat until blueberries are all mixed in.Bake in the center of the oven foro 55-70 minutes, until dark golden brown and a toothpick inserted in the center comes out clean. Itmay come out wet if you pierce a blueberry - just make sure tthat there is no wet batter on the toothpick!Slice each loaf into 13 slices, about 1/2 inch thick, and enjoy!Serving Size:?Makes 39 1/2 inch thick slices
