Grandma's Irish Soda Raisin Bread - 2 loaves

Grandma was born in 1898 and came to America in 1924. She was from Northern England, but married an Irishman and made this bread often for holidays and snacks. The original recipe was made with white flour, margarine and more sugar. I cut the sugar and make it with whole wheat flour. Grandma used a pastry blender to cut the butter into the flour and sugar. I use a food processor.NOTE: King Arthur's White Whole Wheat Flour works great. Trader Joe's White Whole Wheat sucked up the liquid and the loaf came out dry and gritty and tasted "wrong".

Sprinkle 1-2 tsp of the flour/dry ingredients. Break up any raisin clumps and lightly coat the raisins with the flour. Fold in the raisins.Put in greased loaf pans.Preheat oven to 350 degrees. I think that it really helps for the batter to sit for a few minutes while the oven heats.Bake 45-40 mins, or until a toothpick comes out clean.Remove from oven and let sit in pans for 10-15 mins. Remove from pans and let cool. Slice each loaf into 12 slices. Freezes well. Great toasted.Serving Size: 1 slice
