The ingredients for Su's Bread (wheatless) are:

Small bowl - 1/4 cup water, 1 tbsp yeast, & 2 tsp sugar

Big bowl dry ingredients - 1 cup tapioca starch, 1 cup arrowroot starch/flour, 1/2 cup chickpea flour, 1/2 cup potato starch, 4 tbsp potato flour, 1/4 cup whey powder, 1.5 tsp Truvia (or 4 tsp sugar), 2 tsp guar gum, 2 tsp xantham gum, 1 tsp salt, and 1 tsp "Dough Improver" see below.

Med. bowl wet ingredients - 1.5 cups water, 1/4 cup extra light olive oil, 1 large egg (room temp), 2 tbsp egg whites (room temp), 2 tbsp honey.

"Dough Improver" - mix together 2 cups granulated soy or rice lecithin, 1 tbsp ascorbic acid and 2 tbsp powdered ginger. Keep mixture on hand to make new bread. I've added the ingredients into the main recipe as best as I could since the recipe calculator wouldn't let me use the "Dough Improver" recipe that I added.

Here is how you make Su's Bread (wheatless):

In small bowl mix ingredients and let stand for 10 minutes until it gets foamy.In big bowl mix dry ingredients, including pre-mixed "Dough Improver".In med. bowl mix wet ingredients.Then mix everything together. Dough should be soft and look more like cake batter than dough. Place in greased loaf pan and use a wet spoon to spread dough evenly in pan. Cover and set aside to rest for 20 - 40 minutes.Place in a 400 degree oven for 55 minutes; loaf should explode upwards and will brown considerably. Do not undercook! Take bread out of loaf pan and knock on the bottom - - if it sounds "hollow" then it is done. Congratulations!Serving Size:?15 slices
