1/4 C. vegan margarine
1 1/3 C. Sugar, DIVIDED (you can use less, as I did, and even replace some with splenda)

1 egg substitute (1 Tbs. ground Flax with 3 Tbs. of water)
2 tsp of vanilla
2 C of Flour ( I preferred Whole Wheat)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup light soy milk, vanilla
1 1/2 - 2 1/2 tsp vinegar (add this to the soy milk to curdle it)
1 Tbs. Cinnamon
Approx. 1/2 C. raisins

Here is how you make Vegan Cinnamon Swirl Rasin Bread:

Preheat oven to 350.In a large mixing bowl, beat margarine, 1 Cup of sugar (or sugar/Splenda mix), and flax egg.In separate bowl, combine flour, salt, baking powder, and baking soda and add it to the egg mixture alternately with the curdled soy milk.In a small bowl, combine Cinnamon and remaining sugar. Pour 1/3 of the batter into a greased 9x5 loaf pan. sprinkle 1/3 of the cinnamon sugar mixture on the batter. Repeat layers twice. Bake 45-50 min. until a toothpick inserted comes out clean. Cool in pan on wire rack 10 min. Then cool on wire rack completely. Note: You can sub applesauce for part of the margarine, and make a glaze or crumb topping if you find that this recipe is not spiced to your likeness. I loved it though.
