.3 C warm water
2 Tbsp butter,
1 Tbsp salt
2 Tbsp molasses
2 Tbsp honey
1C skim milk
5 C whole wheat flour
4.5 Tbsp vital wheat gluten


How Do I Make Cracked Whole Wheat Bread?

Here is how you make Cracked Whole Wheat Bread:

Simmer cracked wheat and 1.25 cup water for 10 minutes. Let cool to warm. Meanwhile mix the yeast with .3 cup warm water - let sit for 10 minutes. Put butter, salt, molasses, honey, milk, cracked wheat mixture, and yeast mixture in a bowl. Mix. Add 3 cups of the flour & vital wheat gluten, mix again then slowly knead in the other 2 cups. I use a stand mixer and I knead it for 2 - 3 minutes once the flour has been absorbed. Put in a greased bowl with a damp cloth over it to rise until double (about 1 hour). then divide into greased loaves again and allow to double once more.
