How Do I Make Hidden Healthy Zucchini Bread?

Here is how you make Hidden Healthy Zucchini Bread:

Preheat oven to 325 and place prepared 1lb mini loaf pans evenly on a cookie sheet to allow for adequate air-flow around pans.Combine in a large mixing bowl: wheat flour, all-purpose flour, cinnamon, nutmeg, salt, baking soda and baking powder. Using a flour sifter mix together dry ingredients (wheat flour can cause bread to become dense, throrough sifting allows for more air in the flour giving the bread a lighter texture).In mixing bowl beat eggs until light and frothy. Mix in oil, applesauce, vanilla & white sugar until it has a creamy texture. Stir in zucchini. Pour into 4 prepared 1lb mini bread loaf pans.Streusel ToppingCombine flour, brown sugar and cinnamon. Cut butter into mixture. Top each mini loaf with streusel topping.Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool on wire rack for 20 min.Makes 40 1.5oz servings or 4 1lb mini loaves approximately 15oz/ loaf.Mini loaves are great for gifts and storing!
