3/4 cup egg beaters
1/2 cup white bean puree (~1 cup white beans rinsed/drained)
1/2 cup unsweetened applesauce (1 med apple pureed)
1 cup sugar
1 cup splenda
2 tsp vanilla extract
3 cups zucchini, shredded
20 oz can crushed pineapple in juice, drained (reserve)
2 1/2 cups whole wheat flour
1/2 cup flour
2 tsp cinnamon
3/4 tsp nutmeg
1 tsp salt
2 tsp baking soda
1/2 tsp baking powder
1 cup chopped walnuts
3/4 cup raisins, golden



Directions
Beat eggbeaters, applesauce, and bean puree till thick and foamy. Stir in zucchini, drained pineapple and vanilla extract. Add dry ingredients. Add walnuts and rasins. Stir gently until blended.

Pour into 2 bread pans, sprayed with flour Pam. Bake at 350 for 45 - 60 minutes (check at 45mins).

Can also make 3 mini breads in place of 1 full sized bread - bake for 25-30mins.

Cool in pans for 10 mins, then remove.
