I love "bowl" meals, especially egg bowls (think Jack In The Box Breakfast Bowls). I eat this one frequently, sometimes paired with a slice of whole-wheat toast or some fat-free yogurt. Spray a medium-sized skillet with nonstick cooking spray, or use nonstick skillet. Preheat over medium-high heat for about two minutes.Toss all your vegetables (peppers, mushrooms, spinach, chives) in the skillet and cook for about two to three minutes, stirring occasionally, until mushrooms and peppers begin to darken slightly.Add egg substitute/whites.
