Cook the bacon til crisp in oven and pat oil off with paper towel. In a wok... I add the olive oil.. and heat on medium , add the peppers and onion mixture.. and cook for 2 min..Take the red potato and grate it , add it to the pepper and onion mixture and cook for about 5 minutes.. Beat the 3 eggs in a bowl.. and pour over the potato, onion green pepper mixture and put a lid over it to steam top of omelet.. after about 3 min.. add the spinach mushrooms tomatoes and cheese and flip omlette over on its side put lid back on and take off heat and let sit with lid on for about another 2 min. Take your rye bread and put in toaster and butter. Cut omlette in thirds and top with crumbled bacon.. toast ..
