5 medium fresh mushrooms chopped
2 cloves garlic minced
1/8 tsp.Season All
fresh ground pepper (several turns of mill)
1c fresh (or frozen) chopped broccoli (cooked)
1 tsp. extra virgin olive oil
6 large omega 3 eggs
2 egg whites
1/2 c low fat shredded cheese of your choice (I happened to have Mexican 2% on hand)

Saute fresh vegetables in 10 inch oven safe non stick omelet pan with 1 tsp. oil, salt and pepper until soft and water is almost evaporated. Add cooked broccoli ( I just cooked it in the microwave for a couple of minutes). Beat eggs with 2 Tbls. water and 1/4 c cheese; then pour over vegetables in pan. Cook like an omelet - lifting sides and allowing uncooked portion to go underneath. When almost cooked, sprinkle remaining cheese on top and place 4 inches under broiler and cook until set about 2-3 minutes. *Be creative and use what ever fresh vegetables you prefer, like asparagus or zuchini.
