1 large egg
1/2 c skim milk
1 t almond extract

Topping:
2 T butter, melted
1/2 c brown sugar, packed
2 T flour
2 t cinnamon
1/2 c rolled oats
1/4 sliced almonds

Here is how you make Better-for-You Coffee Cake:

Heat oven to 375. Lightly grease & flour 9x9" baking pan.In small bowl, stir together first 5 ingredients; set aside. In medium-large bowl cream shortening with granulated sugar. Stir in egg, then stir in milk and almond extract until well combined. Add dry ingredients and stir just until mixed. Spread into prepared pan.Topping:In small glass bowl or measuring cup, melt butter in microwave. Add remainder of ingredients and stir with fork until mixed. Spread with fork over batter in pan.Check after 25 minutes. Do not overbake. You can also bake in 8x8" pan; it will take slightly longer to cook.
