This is an attempt to make an mostly historically accurate, and palatable cornbread cake as were eaten in the New England colonies around the the eighteenth century.The spices are my addition, many recipies do not include them. But ginger and pepper, and to a lesser degree, cinnamon were very popular spices, as were mace and grains of paradise, the latter two being rather hard to procure. I chose to include spices simply to pack more flavor out of the cake. Maple Syrup was common in many New England recipes, but as trade increased was often replaced with molasses; molasses being seen then as a cheap and inferior byproduct of sugar production was incredibly cheap.Since both are very New England flavors, and both have appeared, in much larger quantities, in Johnnycake recipes, I've decided to use a modest amount of both.

Heat the milk mixture over medium heat, whisking to combine, and bring mixture to a simmer.4.) Slowly pour the hot milk mixture into the dry mixture, stirring often, till a paste like batter forms starts to form.5.) Let the mixture rest for five ore more minutes till the batter is cool enough to handle. For Johnnycakes6.) Form into small cakes, about eighth to quarter of an inch.7.) Heat a fry pan over medium high with just enough oil to coat the bottom.8.) Fry each till golden brown and firm. Wait till the upper side of the cake appears dry to the touch before flipping. For Common Loaf6.) Preheat oven to 375F.7.) Grease the pie pan with the Canola oil8.) Flatten the mixture into the bottom of the pie pan.9.)
