Here is how you make Egg and Bacon Casserole:

Preheat oven to 325 degrees. Use cooking spray in an 8x8 baking dish. Layer potatoes at the bottom of pan. Pre-cook in microwave for 3 minutes to soften potatoes. Sprinkle onions, green peppers, mushrooms and bacon bits on top of potatoes. In a small bowl, whip the egg substitute with the skim milk. Pour egg mixture into the baking dish.
