Preheat either oven or toaster oven at 350 degrees. Oil very small cooking pan and put aside. Whisk eggs until yoke is broken and relatively blended, then put aside. Dice, sausage of choice and potato of choice. Place in baking pan and pour egg over. Top with cheese and add spice as desired. Bake until eggs are fully cooked. Makes 2 servings.
