This is a recipe I adapted from an "egg muffin" recipe that was supposed to help you get more protein into your breakfast. The idea is that you make it ahead, so you can grab it, microwave it, and go. I ended up turning it into a casserole and just cutting the individual servings.

1/2 - 1 pound Jenny O Turkey Sausage (I had to use links, therefore, had to remove casings)
7 eggs
5 cups, egg whites
1/2 medium onion, diced
approx 3 cups frozen broccoli
1 wheat Bolillio hoagie/roll from Wal Mart's deli section
1/2 - 1 cup shredded cheddar cheese
4 slices, Sargento Colby Jack (Reduced Fat) cheese, broken up
4 cloves garlic, minced
salt and pepper to taste

Here is how you make Egg, Sausage, Broccoli Casserole:

Preheat oven: 350. Spray a casserole dish with Pam.Microwave broccoli in a glass dish with a little water, about 2-3 minutes, stirring halfway through. You just want to soften it up.While that's going, cook sausage in a skillet until no longer pink. Drain.Chop broccoli in a food processor, until it's pretty finely chopped.Break apart wheat bolillio roll in to small bits (I used a food processor to get finer pieces). Break up Sargento Colby Jack slices. Beat eggs and egg whites in a bowl. Add onion, broccoli, salt, pepper, garlic (minced into the bowl), flax, and wheat germ. Stir in sausage, all the Sargento, and about half of the cheddar. Add Sargento cheese, along with some of the cheddar. Mix everything.Pour into the casserole dish and bake for approx 40-45 minutes (I used an 'egg muffin' recipe for this, but used a pan, so I just started with 20 minutes and then added time until it was done.) When you have about 5 minutes on the cooking time left, sprinkle the remaining cheddar cheese over the top, bake to melt. Let casserole stand about 5 minutes, cut into 12 portions.
