12 Jenny-O Turkey Sausage links casings removed
2 large eggs
2 cups of lowfat milk
3 cups of hash browns
2 cups of shredded cheddar cheese

Grease a 9 X 13 baking dish and preheat oven to 350 degrees. Remove casings from sausage, break up into smaller pieces, and add to baking dish. In a bowl beat the eggs with the milk and add to baking dish. Add the hash brown potatoes to the baking dish. Top with cheddar cheese and bake for 45 minutes. You could throw some frozen peppers or other frozen vegetables to this. I wouldn't add fresh vegetables because they would make the casserole too wet.
