Slice or dice into small pieces.-Spray skillet with cooking spray and turn on medium heat.-Add potatoes to pan, cook for a few minutes, and spread to the outside of the pan.-Saute onions in the center of the pan until they are translucent. Toss with the potatoes. Push mixture to the side of the pan.-Add spinach to the pan and saute until cooked/wilted. Toss in with potato/onion mixture and push mixture to the side.-Slice or chop tomatoes and add them to the pan. Cook until soft. Toss into mixture.-Beat eggs in a small to medium mixing bowl. Add garlic powder, salt, and pepper.
