Discard the water if you boiled it, then lightly mash it with a fork. Cook onions until clear in 2 Tbsps of butter. Mix eggs, onions with butter, milk, 3/4 of the parmesan, and salt and pepper. Mix this well, I use the food processor to get it a little frothy. Pour this mixture over the cauliflower and fold together. Place in prepared (I use spray olive oil) casserole and bake uncovered in 350 degree oven until almost "set" in the middle. Add remaining parmesan on top and cook about 10 more minutes.
