This recipe is adapted from one that started in Sweden and has lots of variations. I made these for breakfast but you can add fresh chopped garlic and/or garlic salt to make them more of a dinner treat. If you find these too dry, you can add a third egg. (You may want to use three eggs anyway if you don't have access to "jumbo" eggs, which is what I used.)Note: These are very low in net carbs, high in protein, and have almost no sugar, but they are NOT low-calorie or low-fat! Make sure you log them, especially because you'll be tempted to eat more than two.

1/4 cup shredded cheese (I used parmesan & cheddar)
-- dry/aged cheese has the lowest carbohydrate content
1/3 cup high fiber coconut flour
1/4 tsp salt
1/4 tsp baking powder

Here is how you make Very Low Carb Cheese Biscuits:

Preheat oven to 400 degrees for regular oven, 375 for convection oven.Melt the butter over low heat on the stove. Let cool just a few minutes, not long enough to solidify, then pour into a medium sized mixing bowl. Add the eggs to the butter and whisk together.Mix the coconut flour, salt and baking powder in a bowl.Add the coconut flour mixture to the egg/butter mixture and stir together well. If butter starts to solidify at this point, it's okay. It will melt again in the oven!Add the cheese to the mixture and blend it in. Form either four medium sized or six small patties, and place on a baking pan lined with parchment paper.Bake for 15 minutes or until golden brown.When they're removed from the oven, they will appear to be sizzling/swimming in butter. Don't panic! Let them cool and the butter will be absorbed into the biscuits.Serving Size:?Makes 4 regular-sized or 6 small biscuits
