The Swiss cheese adds more flavor than mild cheeses, but feel free to switch it out. They are easy to make and have half a serving of veggies per tart... but you can eat 2 for breakfast! 1/2 cup Swiss chard leaves, sliced into ribbons
1/4 cup chopped tomato (any kind)
dash red pepper flakes
1 oz shredded Swiss cheese
2 eggs
1 TB fat free half and half
1 tsp Dijon mustard

Here is how you make Chard and Swiss Cheese Crustless Tarts:

Preheat oven to 350FUsing cooking spray or a small amount of oil or butter, saute the shallots. Once mostly cooked, add in the tomatoes, chard, and red pepper flakes. Saute until wilted.Using a 6 spot muffin pan, fill the 2 middle spots with water and grease the 4 outer spots. Place the veggie mix in the bottom of the cups. Top with most of the shredded cheese, saving some to top the tarts.Combine the eggs, half and half, and mustard. Mix well. Pour over the veggies and cheese. Top with remaining cheese.Bake 15 minutes or until eggs are set, rotating once.Eat immediately, keep in the fridge, or cool then freeze.
