Blend all ingredients in blender until pureed. Coat pan with nonstick spray and pour 1/4 of batter into pan. I use a rubber spatula to move the batter around, it's fairly thick. Cook 3-4 minutes until the sides are starting to dry. Flip and cook for another couple of minutes.
