If the pan is not non-stick, add a little bit of butter or a spray of olive oil to grease the pan.Break the eggs into a bowl and beat until thoroughly scrambled. Add 2 tbsp milk and beat until blended.Pour the egg mixture into the hot pan. Let cook until set around the edges, then gently peel back the edges and run the liquid egg into the gaps. Continue until the egg is mostly cooked. At this point you can add a little salt and freshly ground pepper if you like.Sprinkle the cheese on top of the egg, then, using a spatula, fold over 1/3 of the omelet to the centre of the pan. Let it cook for a minute, then slide the spatula under the middle third and flip again so that the edge of the omelet is on the bottom. Cook for 1-2 minutes more until it reaches the desired consistency - cheese should be melty but there shouldn't be much liquid egg (if any).
