Here is how you make Spinach and Goat Cheese Strata:

Spray 8" pie plate. Chop bread slices into cubes and lay them in the pie plate and set aside. . In large skillet, heat the oil over medium heat. Add the scallions and garlic, and cook, stirring frequently, until the scallions have softened, about 2 minutes. Stir in the spinach, sprinkle with the splenda, nutmeg, and pepper, and continue cooking until the spinach has softened and is heated through, about 4 minutes. Remove from the heat.
