This is a delicious, filling delight for virtually any meal! I made this recipe into 2 servings because it was huge when I was done with it. Follow package instructions for quinoa.Prep: Cut tomato to desired size. Drain and shred chicken.Preheat olive oil in skillet on medium heat.Omelette: In a small mixing bowl, whisk together all eggs, dried (or fresh) oregano, minced garlic and salt & pepper to your tastes.
