1 tsp. fennel seed, ground
1 tsp. ground black pepper

Grind your spices.Grind the chicken breast or use lean ground chicken.Mix the spices in with your chicken adding a little ice water at a time, no more than 1/4 cup.The ice water helps mix the spices and as moisture so they don't dry out during cookin.Divide the sausage mixture into 6 patties. I weighed mine at 3 oz. each.Preheat nonstic skillet over med heat. Cook sausages in canola oil, adding 1 tbsp. of oil per3 patties. Cook patties for 5 minutes. Three minutes on one side than 2 minutes the other side.If you need more oil, spray pan with cookng spray. Serving Size:?Makes 6 patties.
